A quick and easy tomato sauce that you can modify to your own personal taste

1 Tbsp. coconut oil

1 onion, chopped

2 cloves garlic, minced

1 small can tomato paste

1 large can crushed tomatoes

1 large can whole tomatoes, chopped

Salt and pepper to taste

Pinch red pepper flakes (optional)

¼ cup fresh basil, chopped

Heat oil in a large pot over medium heat.

Add chopped onion and sauté until translucent.

Add minced garlic and stir.

Add tomato paste and cook, stirring for 1-2 minutes.

Add crushed and whole tomatoes.

Season with salt, pepper and red pepper flakes (if using).

Bring to a boil, reduce heat and simmer, partially covered for 20-25 minutes, stirring occasionally.

Allow to cool slightly and puree with an immersion blender (or transfer carefully to a blender and puree) for a smooth sauce. You may leave the sauce chunkier if you prefer.

Add basil and readjust seasonings.
