1/4 cup water

2 Tbsp. gelatin

1 1/2 cups coconut milk

2 cups pumpkin puree

1/2 cup maple syrup

1 1/2 tsp. ground cinnamon
Place the water in a bowl and sprinkle the gelatin over it. Set aside.

Gently warm the coconut milk in a small pot over a low heat – do not let it come to a boil.

Whisk in the water and softened gelatin until combined.

Remove from the heat.

Add the pumpkin puree, maple syrup and cinnamon to a blender and blend until smooth.

Add the gelatin-coconut milk mixture to the blender and blend again.

Divide mixture into 4 serving dishes.

Chill for at least 60 minutes.
